シェフのVirgilio Martinez氏とPía León氏によるリマの旗艦店CentralがNo.1に輝き、2022年に優勝したコペンハーゲンのGeraniumに代わって、Best of the Bestの殿堂入りを果たしました。
2022年のリストでNo.2にランクインしたCentralは、ペルー固有の食材が持つユニークな生物多様性を祝福するメニューを提供し、ペルーを称えます。また、調査部門であるMater Iniciativaの指導のもと、伝統と歴史を守りながら、サステイナビリティを追求しています。 バルセロナのDisfrutar（No.2）、マドリッドのDiverxo（No.3）が、Centralに続きます。
